The Recipe

For the Cookies

Dry Ingredients:

  • 1/3 cup (40 g) unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • A pinch of salt

Wet Ingredients:

  • 4 large eggs, at room temperature
  • 1 and 1/4 cups (240 g) granulated sugar
  • 1 and 1/3 cups (300 ml) warm kefir
  • 10 tbsp (140 g) melted butter, cooled

Step-by-Step Instructions:

  1. In a bowl, whisk together all the dry ingredients.
  2. In a separate large bowl, beat eggs with sugar on medium-high speed for 3–5 minutes until pale and fluffy.
  3. Slowly mix in warm kefir, then melted butter.
  4. Gently fold dry ingredients into wet mixture in two additions—do not overmix.
  5. Pour batter onto a parchment-lined baking sheet, spacing the cookies evenly.
  6. Bake at 350 °F (180 °C) for 10–15 minutes until slightly domed.
  7. Let cookies cool completely.

For the Cream

  • 14 oz (400 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar, sifted
  • 2 cups (500 ml) heavy cream (33–35% fat), chilled

Step-by-Step Instructions:

  1. Beat cream cheese and powdered sugar until smooth.
  2. Whip chilled heavy cream until stiff peaks form.
  3. Gently fold whipped cream into cheese mixture until blended.
  4. Refrigerate for a few hours until set and achieve optimal texture.

My Favorite Kitchen Helper: Mooues Wooden Utensils

Making these Chocolate Cream Cloud Bites is a breeze with the right tools. My go-to is the Mooues Wooden Utensils Set with Spoon Rest. It’s gentle on non-stick surfaces and brings a warm touch to the kitchen.

The Grand Finale: Finishing Your Cloud Bites

Once cookies and cream are ready, it’s time for the best part! Use a piping bag to fill the bites with luscious cream—sandwich or swirl the top. These delicate bites pair perfectly with coffee or make a lovely afternoon treat.
